There is nothing better than a fool proof cookie recipe. A friend shared this one with me several years ago and I’m sure I have made them a bazillion times since. They are so easy, so moist, and always a crowd pleaser. The addition of cake and pudding mix makes takes these cookies to the next level of deliciousness.
Cake Batter Confetti Cookies
Ingredients
- 3/4 cup butter softened or melted
- 3/4 cup brown sugar
- 1/4 cup sugar
- 3.4 ounce instant vanilla pudding mix, dry
- 3/4 cup yellow cake mix, dry
- 1 tsp vanilla
- 1 tsp baking soda
- 2 1/4 cups flour
- 1/2 tsp salt
- 1/2 cup sprinkles
I use the softer sprinkles shown in the picture because I don't like the crunch of other types of sprinkles. Also, you can add more sprinkles as you desire.
Instructions
-
Preheat oven to 350 degrees.
-
In a large mixing bowl, combine softened butter and sugars.
-
Add in pudding and cake mixes. Then add in eggs and vanilla and mix until incorporated.
-
In a small bowl, combine flour, baking soda, and salt. Add to the wet mixture.
-
At this time the batter is pretty thick, so I turn off the mixer and clean off the batter from the attachment. This helps sprinkles to evenly incorporate in the batter.
-
Roll into 1" balls and place on greased cookie sheet. Bake for 10-12 minutes until slightly brown.
