Crockpot Pesto Chicken


  • 4 chicken breasts
  • 8 oz pesto
  • 1/4 cup heavy cream
  • 1/4-1/2 cup parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp onion powder

For serving as a sandwich, you will also need 6-8 hoagie buns, mayo, mozzerella cheese, lettuce and tomato.


  1. Pour half of the pesto in the crock pot. Place chicken breasts on top and top with the remaining pesto. Cook on low 6-8 hours or high for 4 hours.

  2. When the chicken is cooked through remove and shred. Return the chicken to the crock pot and add in remaining ingredients.

I served this on hoagie buns as a hot sandwich. I buttered and broiled the bread to toast, then topped it with the meat, mayo and veggies and mozzarella cheese for extra cheesy goodness. It would be great over pasta, cooked veggies or cauliflower rice as a healthier option.
